Revised Compendium of Microbiological Criteria for Foods

Food Standards Australia New Zealand (FSANZ) have released a revised Compendium of Microbiological Criteria for Food.  This national guidance document is designed to support decision-making about food and processes with reference to microbiological testing.

It features updated guidance and microbiological criteria for dairy products, infant formula, and follow-on formula. Additional information on environmental monitoring, Clostridium botulinum and Shigella spp. is also included.​ 

Working with state and territory dairy regulators, the Dairy Food Safety Victoria Science team led the review and update of the dairy section.
